My curiousity and passion of the culture and traditions aligned with agave spirits has led me on a journey to learn and share. I was first introduced to Mezcal by a dear friend who is from Mexico in 2008. I recently embarked on pursuing my certification from Agave Spirits Institute and have completed:

My goal in 2024 is to the final coursework, Level 4, Master of Agave Spirits, that entails six days of instruction in Oaxaca.
I hope to inspire you to embark on a journey through the rich and captivating history of mezcal in Mexican culture. From its ancient origins to modern-day craftsmanship, we explore every aspect of its production process. Immerse in an interactive agave spirits education exploring the history, production methods and experience tasting a variety of 5 different agave spirits, including Mezcal, Tequilla, Bacanora, Sotol and Raicilla. Approximately 60 minutes depending on the number of guests and level of interaction.
Immerse in an interactive agave spirits education exploring the history, production methods and experience tasting a variety of 6 different Mezcal expressions each created with a different species of agave, including Espadin, Tepeztate, Tobala, Arroqueño, Cupreata and Cenizo. Approximately 60-80 minutes depending on the number of guests and level of interaction.
This experience will take you on an exploratory tour of the classifications. Tastings explore 7 mezcals, highlighting 4 within the respective age classifications - joven, repasado, anejo and extra anejo-and 3 focused on the production method classifications - ancestral, artisinal and mezcal (industrial). Approximately 60-80 minutes depending on the number of guests and level of interaction.

Bat Friendly Tequila and Mezcal Project is a unique certification initiative that aims to promote sustainable practices in the tequila and mezcal industry. Recognizing the crucial role bats play in pollinating agave plants; the project encourages producers to allow at least 5% of their agave plants to flower, providing essential food for nocturnal pollinators. This practice also enhances the genetic diversity of agave plants, making them more resilient to disease and improving their reproductive success. In so doing, the Bat Friendly Tequila and Mezcal Project is helping to ensure the long-term viability of the tequila and mezcal industry. The Bat Friendly label appears on bottles providing consumers with a helpful visual cue what brands meet these bat friendly criteria. Founded in 1982, Bat Conservation International has grown into a globally recognized conservation organization that works to identify and lead critically important conservation projects that prevent the extinction of the world’s most threatened bats. Bats and agaves rely on each other for survival. Bat Conservation International is committed to supporting conservation efforts that prioritize the well-being of these essential pollinators. Approximately 100 of the 1800 species of bats thrive on nectars such as agave. Species that are endangered, including the Mexican long-nose bats, play a critical role in the ecosystem, particularly in the pollination of agave plants, the cornerstone of mezcal production. S.A.C.R.E.D. helps improve lives in the rural Mexican communities where heritage agave spirits are made. They raise money to underwrite programs that help replant agave, build libraries, ensure water security, and repair damage done by earthquakes.
